Loaded Hash Brown Sausage Skillet

We love a good breakfast on a weekend morning! Here is my latest cast iron skillet loaded hash brown and sausage dish:

  • 1/2 bag country style hash browns
  • 1/2 package (8oz) of maple flavored breakfast sausage links
  • 5 bacon strips
  • 5-8 cherry tomatoes, diced
  • 5-8 green onions, chopped
  • Colby jack cheese, shredded
  • Sour Cream
  • 2 Tbsp Oil (Canola or Safflower)
  • 2 Tbsp butter
  • Seasoning (salt, pepper, Lawrys and St. Elmos)

In a large skillet, heat the oil until smoking. Add butter. As soon as butter is melted, add an even layer of hash browns and let cook for several minutes before turning. In a separate skillet, cook sausage and bacon. Chop cooked sausage and bacon. Season hash browns well with seasonings of choice (I used the ones listed). Add meat when the potatoes are fully cooked. Top hash browns with tomatoes, cheese, onions and sour cream before serving.
